The chocolate and mint mousse is a perfect example of how a few quality ingredients can create an extraordinary balance of flavors and textures. Chocolate and Mint Mousse

Ingredients

  • 2 oz Coconut Milk
  • 0.7 oz Cocoa powder
  • 0.7 oz Powdered Sugar
  • 0.3 oz Cornstarch
  • 8.3 oz Non-Dairy Yogurt or Non-Dairy Cream
  • 1.3 oz Mint
  • 4 Mint
  • to taste Powdered Sugar

Instructions

    To prepare the mint and chocolate mousse, pour the coconut milk into a saucepan, add the cornstarch and the unsweetened cocoa powder.

    Mix and add the powdered sugar. Mix well with a whisk until you obtain a smooth mixture, and continue cooking for about 5 minutes until you have a smooth and slightly thick cream.

    Distribute the mixture, still warm, into four large glasses, 8 cm in diameter and 5 cm high, then transfer them to the refrigerator and let them cool for 15-30 minutes, until the base is well set. At this point, whip the cold vegetable cream.

    You should obtain a firm and stable consistency. Pour the mint syrup into the whipped cream and gently mix with a spatula, using bottom-up movements, so as not to deflate the mixture and maintain a soft and airy texture.

    Add the mint leaves and mix again very gently. Once the chocolate base is cold, complete the glasses by distributing the mint mousse on top.

    When you have filled them all, garnish with powdered sugar and mint leaves.
