Russian Salad

Russian salad is a perfect balance between freshness and depth of flavor. Crunchy vegetables and homemade mayonnaise intertwine in a dance of textures and aromas, creating a harmonious blend of common ingredients elevated through simplicity. To make the Russian salad, first boil the potatoes for about 40 minutes from the boiling point, starting with cold water. Prepare the hard-boiled eggs by placing them in cold water and counting 7 minutes from the moment the water reaches boiling point. Meanwhile, peel the carrots.

Blanch the carrots in boiling salted water for 10 minutes; they should remain slightly crunchy. Then blanch the peas for about 1 minute; you can use the same water as the carrots. In the meantime, dice the pickled cucumbers into cubes of about 5 mm and transfer them to a large bowl.

Peel the eggs that have cooled and cut them into cubes of the same size. Once cooked, drain and peel them.

Cut them into cubes of about half a cm, then do the same with the carrots. Add everything to the inside of the bowl with the pickled cucumbers. Mix and let cool in the refrigerator for at least 15 minutes.

Now prepare the mayonnaise: pour the egg and oil into the container of a blender. Blend with an immersion blender, keeping the yolk in the center of the blender until you reach the consistency of mayonnaise.

Add a pinch of salt, lemon juice, and vinegar. Mix again.

Incorporate the mayonnaise, add the oil, and mix well to combine everything. Your Russian salad is ready to be served!
