Ingredients

  • 1 yellow onion, diced (about 1 cup, 225g)
  • 2 garlic, minced
  • 1 Jalapeño Pepper, seeded and diced
  • 0.75 Boneless Skinless Chicken Breast, approximately 3/4 lb
  • 2 cans Cannellini Beans, drained and rinsed
  • 1 can Pinto Beans, drained and rinsed
  • 1 cumin
  • 1 Oregano, dried
  • 0.25 Cayenne pepper
  • 0.25 black pepper, freshly ground
  • 1 jar Salsa Verde
  • 2 Chicken Broth

Instructions

    Place the diced onion, minced garlic, diced jalapeño (if using), and whole chicken breast into the bottom of the slow cooker.

    Add the drained cannellini and pinto beans on top.
