A simple, quick base recipe for crispy, yeast-free Flammkuchen dough. It suits vegetarian toppings, bacon or even a sweet finish.

This homemade dough is the foundation of a perfect Flammkuchen. It is incredibly easy to prepare, requiring only a few pantry staples and a short resting time to achieve that signature thin, cracker-like texture.

Flammkuchen Dough

Ingredients

  • 7 oz Flour
  • 1 tsp Salt
  • 1 pinch Sugar
  • 1 tbsp Olive Oil
  • 3.4 fl oz Water

Instructions

    Quickly knead all ingredients for the Flammkuchen dough together into a smooth dough. Use slightly more or less water if needed so that the dough is neither too dry and crumbly nor sticky.

    Cover the dough and let it rest for about 30 minutes. In the meantime, preheat the oven to the highest possible temperature (250-300 °C / 482-572 °F). If you have a pizza stone, preheat that in the oven as well.

    On a lightly floured work surface, roll out the dough very thinly into two oval bases and top them to your liking (see notes). On a pizza stone, Flammkuchen take about 3-5 minutes depending on the temperature; on a baking sheet, they take 7-10 minutes.

Ago's Notes

  • For exact topping quantities, see the source site's original Alsatian Flammkuchen recipe with ham or bacon.
  • For a spelt Flammkuchen dough, simply replace the wheat flour 1:1 with light spelt flour (type 630).
  • Part of the wheat flour (about 50-80 g / 1.8-2.8 oz) can be replaced with whole-grain flour. A pure whole-grain dough needs a little more liquid.
  • Timing: 5 minutes of preparation, 30 minutes of resting and about 7 minutes of baking, roughly 42 minutes in total.

I absolutely love how this dough turns out—so much crispier than a standard pizza crust. The preparation is effortless, and while it differs from the thicker, more fermented Neapolitan styles I know, the result is just as satisfying. It has a lovely delicate crunch that carries the toppings perfectly.
