To prepare the beef stew, first make the beef broth following our recipe and keep it warm. Prepare the rest of the ingredients: wash and dice the celery, carrot, and onion. Tie the sage, rosemary, and thyme together with string. Finally, cut the meat into cubes of about 5 cm.

In a stainless steel pot with a double bottom, pour the oil and butter. When the butter has melted, add the vegetables and the bouquet of herbs. Let it simmer gently for 10 minutes.

After 10 minutes, increase the heat and add the pieces of beef, stirring occasionally to seal the meat well. Season with salt, add the flour, and mix to combine.

Deglaze with red wine and let all the alcohol evaporate. At this point, add the beef broth and cover with a lid, making sure to leave a small vent. Let it simmer over medium-low heat for about 2 hours.

After this time, remove the lid and cook for another 20-30 minutes so that it dries a little. Taste and adjust the salt if necessary. Remove the bouquet of herbs, turn off the heat, and let the stew rest for 10 minutes before serving, so that the sauce will be creamier. Your beef stew is ready to be enjoyed!
