Belgian Waffles

These waffles combine the clarity of Italian baking with the warmth of Belgian tradition - a balance of crispy outer shell and airy interior that can be perfectly realized in any kitchen. The balance of butter, flour, and baking powder creates a texture that honors both the origin and the practice of baking, without hiding.

Gently melt the butter and let it cool slightly. Mix the flour and baking powder. Add the sugar, salt, eggs, and melted butter to a large bowl.

Gradually add the milk while stirring, and whisk everything together until smooth. The batter is much thinner than normal cake batter and is somewhat similar to pancake batter. If you have time, you can let the batter rest for about 10-30 minutes, but it's also fine without.

Heat up the waffle iron and lightly grease it, for example, with some baking spray. Pour a few tablespoons of batter into the molds (we have an iron with 2 waffle molds), close it, and bake until golden brown in 3-4 minutes, depending on the appliance and the heat. Depending on the size of the waffle iron, this recipe yields about 8-12 large, thick waffles.
