Chocolate Lava Cake with Molten Heart

Ingredients

  • 3.7 oz dark chocolate
  • 3.7 oz butter
  • 0.8 oz Flour

Instructions

    To make the chocolate lava cake with a molten heart, first melt the dark chocolate and butter in a double boiler, stirring constantly. Once melted, let it cool to 30° 2. If you don't have a thermometer, you can let it cool at room temperature for about 20-25 minutes. In the meantime, butter and flour 4 aluminum molds.

    When it reaches 30°, transfer the chocolate and butter mixture to a mixer with steel blades. While the mixer is running, add the sugar and wait for it to be well combined, then gradually pour in the beaten eggs.

    When the eggs have been absorbed, add the flour and continue to mix until you have a smooth and even mixture. Fill the molds with 70 g of mixture each, using a piping bag or spoon; the mixture should reach about two-thirds of the mold.

    Put the molds in the freezer for at least 6 hours, preferably overnight. When the cakes are frozen, arrange them in a baking sheet and bake in a preheated convection oven at 190° for 14-15 minutes, on the middle rack.

    After the cooking time, carefully unmold the cakes by turning the molds upside down on a plate, then sprinkle with powdered sugar and serve your chocolate lava cake with a molten heart immediately!
