This American-style goulash is a quintessential comfort dish that brings together simple pantry staples into a hearty, tomato-rich meal. Rooted in the tradition of easy, satisfying family dinners, it combines ground beef and tender elbow macaroni simmered in a robust tomato sauce. The magic lies in the one-pot technique, which allows the pasta to absorb the savory sauce fully, creating a dish that feels like a warm embrace from Grandma herself.

Grandma's Classic American Goulash

Ingredients

  • 1 lb lean ground beef
  • 1 yellow onion, chopped
  • 2 garlic, minced
  • 2 cup tomato sauce, marinara sauce or tomato-based pasta sauce
  • 2 cup Water, beef broth or water, plus more as needed
  • 14 oz diced tomatoes with juice
  • 3 tbsp Tomato Paste
  • 1 green bell pepper, diced
  • 1 1/2 tsp Italian Seasoning
  • 1 Bay Leaf, use 2 if small
  • 1/2 tsp Salt
  • 1/4 tsp black pepper
  • 8 oz Elbow Macaroni, uncooked
  • 1/2 cup Mozzarella di Bufala, shredded cheddar or mozzarella cheese

Equipment

  • Dutch Oven

Instructions

  1. 1

In a Dutch oven or large skillet with a lid, brown the ground beef over medium-high heat along with the chopped onion and minced garlic until no pink remains. Drain excess fat to keep the sauce clean and balanced.

  2. 2

Stir in the marinara sauce, beef broth (or water), diced tomatoes with their juices, tomato paste, diced bell pepper if using, Italian seasoning, bay leaf, salt, and black pepper. Bring the mixture to a boil over medium-high heat.

  3. 3

Add the uncooked elbow macaroni, reduce the heat to medium-low, cover, and let simmer for 10 minutes. Stir occasionally to prevent the pasta from sticking.

  4. 4

Remove the lid and continue simmering for another to 10 minutes until the pasta reaches tenderness.

  5. 5

Discard the bay leaf. If desired, sprinkle the shredded cheese over the top, cover again, and let rest for about 5 minutes to allow the cheese to melt and the sauce to thicken.

Ago's Notes

  • Stirring frequently after adding pasta is essential to prevent sticking and ensure even cooking.
  • If the sauce thickens too quickly before the pasta is done, add small amounts of broth or water to maintain a gentle simmer.
  • This recipe can be doubled easily for larger gatherings.
  • To extend the meal, consider adding extra pasta, canned beans, or seasonal vegetables like zucchini or mushrooms.
  • Leftovers keep well refrigerated for up to 4 days and reheat beautifully with a splash of broth to refresh the sauce.

Serve this goulash warm, with or without cheese, as a satisfying, no-nonsense meal that honors the spirit of Italian-inspired comfort food.

Birria Tacos

Birria tacos are a celebration of slow-cooked, richly spiced beef tucked inside crisp, cheesy tortillas. This recipe embraces the Italian culinary principle that simplicity perfected is superior to complexity invented. Using a humble beef chuck roast, the meat is transformed through patient slow cooking into tender, flavorful shreds that carry the essence of smoky chipotle and warm spices. The tortillas, dipped briefly in the aromatic consomé, crisp beautifully with melted Monterey Jack cheese, creating a harmonious balance of textures and flavors. This dish honors tradition by respecting the ingredient's integrity and the slow-cooking technique that unlocks deep flavor. It's a straightforward recipe that anyone can master, proving that with quality ingredients and proper technique, you don't need to overcomplicate to achieve excellence.

Chicken Cobbler

Chicken Cobbler offers a comforting, one-skillet meal that masterfully balances a creamy, savory filling with a golden homemade cheddar biscuit topping. This dish is a clever reinterpretation of classic cobbler technique, replacing the traditional sweet fruit with tender chicken and vegetables, creating a lighter yet equally satisfying alternative to chicken pot pie. The biscuit topping bakes directly atop the filling, allowing the layers to remain distinct and the texture to stay delightfully fluffy.
