Pasta with Agretti

To prepare the pasta with agretti, start by cleaning the barba di frate: remove the earthy base, then cut them into 3-4 parts and rinse well. Slice the Aglio di Nubia garlic into rounds.

Pour the oil into a pan, add the garlic, and cook over very low heat for about 5 minutes. Transfer everything to the mixer and blend until smooth.

Pour the cream back into the same pan and add the chili peppers, cut into pieces. Let it flavor for a few minutes before adding the agretti.

Season with salt and gently sauté, stirring often; it will take about 10 minutes to soften. Meanwhile, cook the spaghetti in boiling salted water for half of their cooking time. Moisten the agretti with a ladle of the pasta cooking water.

Drain the spaghetti into the pan, taking care to save some of the pasta water. Finish cooking the pasta by adding a little hot water at a time and stirring continuously. Your pasta with agretti is ready to be served!
