Watermelon Salad

Ingredients

  • 1 cantaloupe
  • 3 1/2 fl oz watermelon juice
  • 3 1/2 fl oz Vegetable Oil
  • 1 tsp Mustard
  • 5 oz goat cheese
  • rucola

Instructions

  1. 1

First, remove the rind (and if you want, the seeds) from the watermelon and cut it into cubes.

  2. 2

Blend a small part of the cubes and filter it to obtain 100 ml of juice.

  3. 3

Prepare the watermelon mayonnaise: combine watermelon juice, vegetable oil, and mustard in a suitable container and blend for a few seconds at a time, until you obtain a smooth and creamy mayonnaise.

  4. 4

Finally, plate the dish: create a bed of arugula, add pieces of cheese and watermelon, and complete with the mayonnaise.

  5. 5

That's it, the watermelon salad is ready, and all that's left is to enjoy it.

I absolutely love how the creamy texture of the dressing contrasts with the juicy watermelon. It is a very modern, deconstructed way to enjoy summer flavors, quite different from the traditional Italian fruit salads that usually rely on simple maceration. The sweet and tangy taste is incredibly refreshing!
