Almond Flour Cake

Ingredients

  • 4 oz Almond flour
  • 2.7 oz dark chocolate
  • 2.7 oz butter
  • 2 oz Sugar
  • 1.3 oz Potato starch
  • 3 Egg
  • 0.5 oz Baking Powder
  • 1 Orange Zest
  • 0.7 oz Almonds
  • to taste Powdered Sugar

Instructions

  1. 1

To prepare the almond flour cake, place the butter in a bowl and melt it in the microwave for a few seconds (alternatively, you can melt it in a double boiler). In a bowl, also place the chocolate chips (you can use the same amount of chopped chocolate).

  2. 2

Melt it in the same way, in the microwave for 4 minutes, or in a double boiler. Now, pour the melted butter into the melted chocolate and mix well.

  3. 3

In a bowl, combine the eggs and sugar, then whisk with an electric mixer until you obtain a light and fluffy mixture. At this point, pour in the chocolate and butter mixture.

  4. 4

Now, incorporate the almond flour, starch, and sifted baking powder.

  5. 5

Mix again with the whisk until the flours are well absorbed. Finally, flavor the batter with the grated orange zest. Pour the mixture into a springform pan with a diameter of 20 cm, lined with baking paper.

  6. 6

Distribute the batter evenly and level the surface with the back of a spoon, then sprinkle with almond slivers and bake in a preheated oven at 160°C for about 40 minutes.

  7. 7

To check for doneness, insert a toothpick, which should come out dry. Remove from the oven and let cool completely before removing it from the mold. When ready to serve, transfer it to a serving plate and dust with powdered sugar. Your almond flour cake is ready to be enjoyed!

Ago's Notes

  • Adjust the salt according to the salt content of the preserved ingredients.

Enjoy your meal, and savor each bite as a work of art made of balance and respect for the ingredients. The sweetness of the almond flour pairs perfectly with the chocolate, and the orange zest adds a fresh note that will enchant you.
