This easy tomato and burrata salad is a fresh take on Caprese. Two kinds of tomato bring contrasting textures, while pesto and balsamic sharpen the rich, creamy cheese.

Burrata Salad

Ingredients

  • 4 Tomatoes
  • 2 cup Cherry or Grape Tomatoes
  • Olive Oil
  • 1 tsp balsamic vinegar
  • Flaky sea salt
  • Freshly Ground Black Pepper
  • 8 oz burrata
  • 1/3 cup basil pesto
  • Basil, Use either herb or a mixture of both.

Instructions

    Arrange the sliced heirloom tomatoes on a large serving platter.

    In a medium bowl, toss the halved cherry tomatoes with a drizzle of olive oil, the balsamic vinegar, and pinches of flaky salt and black pepper. Scatter them over the platter.

    Tear the burrata into pieces and arrange it evenly over the tomatoes. Season with more flaky salt and several grinds of pepper.

    Dollop the pesto over the salad, drizzle with olive oil, and garnish with fresh basil, mint, or both. Adjust the seasoning and serve immediately.

  • For the best flavor, use ripe peak-season tomatoes and serve the salad soon after assembling.
  • You can assemble the tomatoes and burrata up to 1 hour ahead; add the fresh herbs just before serving.
