A refreshing and crunchy celery salad featuring Medjool dates, crisp apples, and chickpeas, tossed in a bright lemon vinaigrette.

This vibrant celery salad is the perfect balance of sweet and savory. With the crunch of fresh celery and the richness of chickpeas and Parmesan, it makes for a light yet satisfying meal or side dish.

Celery Salad

Ingredients

  • 8 large celery stalks with leaves
  • 1/2 cup Red onion
  • Chickpeas
  • 4 soft medjool dates
  • 1 small apple
  • 1/2 tsp Salt
  • 1/4 cup Almonds
  • 1/4 cup Parmesan Cheese
  • 1/4 cup Fresh Parsley
  • 1/4 cup Lemon Juice
  • 2 tsp Maple Syrup
  • Dijon Mustard
  • 1 Garlic Cloves
  • 1/4 tsp Salt
  • Freshly Ground Black Pepper
  • 1/3 cup Olive Oil

Instructions

    Make the lemon vinaigrette: In a small bowl, whisk together the lemon juice, honey, mustard, garlic, salt, and several grinds of pepper. Drizzle in the olive oil while whisking and continue whisking until the dressing is emulsified. Alternatively, combine the dressing ingredients in a jar with a tight-fitting lid and shake to combine.

    In a large bowl, combine the celery, red onion, chickpeas, dates, apple, and salt. Add half the dressing and toss to coat. Chill in the refrigerator for 20 minutes.

    Remove from the fridge and toss again. Top with the almonds, Parmesan, and parsley. Season to taste, adding more dressing as desired, and serve.

I absolutely love how the sweetness of the dates complements the sharp bite of the red onion in this salad. It is a very quick, assembly-style dish that requires no cooking, making it much lighter than a traditional Italian composed salad. The citrus dressing brings such a bright, clean taste to every bite!
