Creamed Peas
A rich and velvety side dish made with heavy cream, butter, and tender green peas.
This creamy side dish is the ultimate comfort food. Using a simple roux method, you can transform frozen peas into a luxurious, restaurant-quality accompaniment that pairs perfectly with roasted meats or fish.

Instructions
- 1
Rinse the frozen peas.
- 2
Melt butter in a large sauté pan over medium heat and add flour to create a light roux, stirring constantly for 2-3 minutes.
- 3
Add room temperature heavy cream to the roux and whisk to combine.
- 4
Once the cream mixture has thickened to the point where it’s still loose enough to drip from a spoon, but clings to the back of one without running off, you’re good! Lower the heat to medium-low.
- 5
Add sugar, salt, and pepper.
- 6
Add the thawed and rinsed peas.
- 7
Stir to combine and enjoy!
I absolutely love how this recipe turns a simple pantry staple into something so decadent. The cooking style is very straightforward, relying on a classic roux technique. While it is much richer than the lighter, olive-oil based vegetable preparations I often see in Italian tradition, the creamy texture and sweet pea flavor are incredibly satisfying.
