Easy Chili Crisp
A deeply aromatic homemade chilli crisp with Sichuan peppercorns, warm spices, crispy shallots, fried garlic, sesame, and gently spicy red oil.
This version builds depth in stages. Whole spices first soak so they can infuse without burning, then gently perfume neutral oil with ginger and spring onion. The strained hot oil blooms chilli, paprika, sesame, soy, and black vinegar before seasoning and ready-made fried shallots and garlic create the savoury crunch.

Roughly break or chop the cinnamon, bay leaf, and star anise into pieces about 1 cm (0.4 inch) wide.

Put the chopped spices in a bowl with the cardamom, Sichuan peppercorns, fennel seeds, and cloves. Add the water, stir until everything is coated, and leave for 30 minutes so the spices absorb it.

Transfer the soaked spices to a 20 cm (8-inch) saucepan. Add the spring onion, ginger, and cold oil. Heat over medium-low, then adjust the heat until small, gentle bubbles rise from the base.

Maintain the gentle fizz for 25–30 minutes, stirring two or three times and watching closely. By the end, bubbling should slow and the ginger and spring onion should be dark golden but not burnt.

Just before the infusion finishes, combine the sesame seeds, chilli flakes, paprika, soy sauce, and black vinegar in a metal or high-heatproof bowl. Do not mix them far in advance because the sesame can absorb the liquids.

Set a fine-mesh metal strainer over the bowl. Carefully strain the hot infused oil onto the sizzle mixture and stir. Discard the spent spices, ginger, and spring onion caught in the strainer.

Leave the oil mixture to cool for at least 15 minutes.

Stir the sugar, salt, chicken stock powder, crispy fried shallots, and crispy fried garlic into the cooled oil until evenly distributed.

Pour into a clean jar or airtight container. Once fully cool, seal and refrigerate for at least 24 hours so the flavours meld. It is even better from day three onward and keeps refrigerated for 6–8 weeks.

Stir very thoroughly before every use, lifting the crunchy pieces through the oil. Spoon over noodles, dumplings, fried rice, soups, eggs, roasted vegetables, meat, or fish, or mix into mayonnaise or sour cream for a quick dip.
Ago's Notes
- Use whole red or pink Sichuan peppercorns, not ground pepper. They perfume the oil and add their characteristic citrusy, tingling aroma.
- Soaking the dried spices with two teaspoons of water for 30 minutes prevents scorching and improves flavour extraction. Do not skip this step.
- Keep the oil at a very gentle fizz. If the spring onion or ginger browns too quickly, lower the heat; the aromatics should finish dark golden, never burnt.
- Use a metal or genuinely heatproof bowl for the sizzle ingredients and strain the oil away from your face. Hot oil can spit when it meets the liquid seasonings.
- Let the chilli crisp infuse for at least 24 hours before using. Its flavour improves further from day three onward.
- Refrigerate in a clean airtight jar for 6–8 weeks. Always use a clean spoon and stir thoroughly before serving so the crisp pieces are redistributed.
Stir well before spooning over noodles, dumplings, fried rice, eggs, soups, roasted vegetables, meat, or fish.
