Garlic Herb Roasted Cherry Tomato Carbonara

Ingredients

  • 2 cup Cherry or Grape Tomatoes
  • 1/4 cup Olive Oil
  • 1/2 cup fresh mixed herbs
  • 6 garlic
  • Salt
  • pepper
  • 3 oz thinly sliced prosciutto
  • 4 Egg yolk
  • 1 Egg
  • 1 cup Parmesan Cheese
  • 2 tbsp butter
  • 1 lb favorite long cut pasta
  • 8 oz burrata cheese at room temperature
  • Chili flakes
  • Basil

Instructions

    Preheat the oven to 425°F. In a baking dish, toss the tomatoes with the olive oil, 2 tablespoons of herbs, garlic, salt, and pepper. Arrange the prosciutto around the tomatoes. Roast for 10–15 minutes, until the tomatoes burst and the prosciutto is crisp.

    Meanwhile, whisk the egg yolks, whole egg, and Parmesan together in a large serving bowl. Add the butter.

    Cook the pasta until al dente. Just before draining, reserve 1 cup of the pasta cooking water, then drain.

    Immediately add the hot pasta to the egg mixture, tossing quickly to combine. Add the hot pasta water a little at a time, tossing continuously, until the sauce is creamy and glossy. Add the roasted tomatoes and all their juices. Crumble in the crispy prosciutto and gently toss. Season with freshly cracked black pepper.

    Divide the pasta among plates. Top with torn burrata, basil, and Calabrian chilies. Serve immediately and start twirling!

This dish is pure comfort in a bowl; the richness of the burrata paired with the acidic burst of tomatoes makes for an incredible outcome. I love this rustic roasting method as it concentrates flavors much more intensely than a standard pan sauce. While not strictly traditional to Roman carbonara due to the heavy use of burrata and tomato, it honors the Italian spirit of using high-quality seasonal ingredients to create something soulful and delicious.
