Lady's Kisses are small biscuits originating from the city of Tortona: two round halves of almond shortcrust pastry joined by a thin layer of chocolate!

Lady's Kisses

Ingredients

  • 10 oz butter
  • 10 oz Sugar
  • 10 oz Almond flour
  • 10 oz Flour
  • 1.7 oz Egg whites
  • 0.1 oz Salt
  • 12.5 oz dark chocolate

Instructions

    To prepare the Lady's Kisses, start with the shortcrust pastry. In the bowl of a stand mixer fitted with the paddle attachment, place the soft but still pliable butter in cubes and the sugar. Let it mix for a few seconds at low speed until the dough is well combined. Add the almond flour and turn on the mixer again. Pour the egg whites into a bowl, add the salt to dissolve it.

    Pour everything into the dough. As soon as the fat mixture is well combined, turn off the machine and add the sifted flour. Mix always at low speed, occasionally scraping the sides of the mixer bowl with a spatula after a few seconds. As soon as the flour has been absorbed, transfer the dough to a lightly floured surface. Add a light layer of flour on top

    and pat it down without kneading. Wrap the dough in plastic wrap and transfer it to the refrigerator for 2-3 hours. When the dough is well chilled, transfer it to a lightly floured surface. Using two rolling pins, roll out the dough to a uniform thickness of 1 cm. Trim the first edge, then cut out strips for the length of 2 cm thick using a ruler and a knife.

    Create the lattice by making strips in the other direction that are 2 cm wide, so that you obtain cubes that weigh about 4-5 g each. Round them out in the palm of your hand and place them on a baking sheet lined with parchment paper, spacing them apart. With these doses you will obtain about

    Bake in a preheated static oven at 180° for 12 minutes. As soon as the cookies are golden brown, remove them from the oven and let them cool down. Now temper the chocolate and transfer it into a paper cone. Turn half of the half spheres upside down, squeeze a little chocolate in the center

    and place another half sphere on top, pressing lightly to join them. Repeat this operation for all the cookies and let them solidify before enjoying. If it is too hot, put the Lady's Kisses in the refrigerator.
