Quick and Juicy Sheet Pan Apple Cake
A juicy, uncomplicated apple cake baked on a sheet pan that everyone loves – perfect for reluctant bakers like me!
A good apple cake doesn't need complicated techniques, just the right balance between fruit and a moist batter. This sheet cake comes together in a few simple steps, and five diced apples keep every slice juicy. It's the ideal choice when you need a dependable homemade cake for the weekend without much effort.

Instructions
- 1
Preheat the oven to 350°F (180°C), using conventional heat (top and bottom).
- 2
Mix the butter, sugar and vanilla sugar until creamy. Beat in the eggs one at a time, fully incorporating each egg before adding the next. Mix the flour and baking powder together and add them to the batter.
- 3
Peel the apples and cut them into small cubes. Fold them into the batter with a spatula.
- 4
Spread the batter onto a greased baking sheet (approx. 16 x 12 in / 40 x 30 cm) and bake for about 30 minutes.

Ago's Notes
- Makes one sheet cake on a baking sheet of about 16 x 12 in (40 x 30 cm).
- More apples make the cake even juicier.
- Grease the baking sheet well or line it with parchment paper so the cake releases more easily.
- To check doneness, insert a wooden skewer: if it comes out clean, the cake is done.
- For extra aroma, sprinkle cinnamon and sugar over the batter before baking; the surface gets a lightly caramelized crust.
- Storage: keeps for 2–3 days covered at room temperature, or freeze in portions for up to 3 months.
I love how juicy this cake turns out thanks to the generous amount of apples; it's a rustic, no-fuss bake that suits anyone who isn't a keen baker. Compared with a classic Italian torta di mele, which is usually taller and more structured, this sheet pan version is looser and easier-going, with a buttery, tender crumb. The soft apple cubes under a light dusting of powdered sugar taste comforting and just sweet enough.
