Roasted Cauliflower

Ingredients

  • 1 Cauliflower
  • 2 tbsp Olive Oil
  • 1/2 tsp Garlic powder
  • 1/2 tsp Sea salt
  • 1/4 tsp smoked paprika
  • Freshly Ground Black Pepper
  • Grated Parmesan
  • Parsley

Equipment

  • baking sheet
  • Oven

Instructions

  1. 1

Preheat the oven to 425°F and line a large baking sheet with parchment paper.

  2. 2

Break the cauliflower into bite-sized florets and place on the baking sheet. Drizzle with the olive oil and sprinkle with the garlic powder, salt, smoked paprika, and several grinds of pepper. Toss to coat, adding more oil as needed to lightly coat the florets, and spread evenly on the baking sheet.

  3. 3

Roast for 25 to 35 minutes, or until tender and browned around the edges. Season to taste and top with Parmesan, if desired. Garnish with parsley, if using, and serve.

I love how the smoky paprika adds such a deep, charred flavor to the florets; it's much more intense than the simple boiled cauliflower I grew up with. This roasting method is foolproof and creates a wonderful texture that stays slightly firm yet tender inside. While not a traditional Italian preparation, the addition of Parmesan makes it feel like a modern twist on classic Mediterranean flavors. It is incredibly savory and addictive!
