To prepare the sautéed turnip tops, first clean the vegetables. Remove the toughest stems and outer leaves. Once cleaned, you will obtain about 360 g of turnip tops, wash them several times with cold water and drain them.

Put a large pot of water on the fire and when it boils, pour in the turnip tops and let them cook for 15 minutes. When there are 2-3 minutes left, prepare a soffritto in a pan with oil, 2 whole cloves of garlic and a chili pepper cut into pieces. As soon as the turnip tops are well wilted, drain them.

When the garlic is golden brown, add the turnip tops, season with salt and sauté over medium-high heat for about ten minutes. Turn off the heat and serve.
