A generous Italian-style seafood boil with crab, lobster, mussels, clams, shrimp, sausage, potatoes, and corn tossed in garlic butter.

White wine, herbs, lemon, and garlic flavor the cooking broth; a reduced garlic-butter sauce coats the drained seafood before serving.

Italian Seafood Boil

Ingredients

Seafood boil

  • 1 bottle White Wine
  • 3 qt Water
  • 1 1/2 tsp black pepper
  • 1/2 tsp Chili flakes
  • 4 Thyme
  • 2 Fresh Rosemary
  • 2 Lemon
  • 2 garlic
  • 5 Shallots
  • 1 tbsp Salt
  • 2 lb red baby potatoes
  • 3 corn on the cob
  • 12 oz kielbasa
  • 1 lb crab legs
  • 5 lobster tails
  • 1 lb Mussels
  • 1 lb Clams
  • 1.5 lb shrimp

Garlic butter sauce

  • 1 lb butter
  • 8 garlic
  • 1/2 tsp Salt
  • 1/4 tsp black pepper
  • 1/4 tsp Chili flakes
  • 1/4 tsp Sugar
  • 1 cup broth
  • 8 Lemon

Equipment

  • saucepan
  • colander
  • measuring cup

Instructions

    In a very large stockpot combine the white wine, water, 1 1/2 teaspoons black pepper, 1/2 teaspoon red pepper flakes, thyme, rosemary, halved lemons, garlic heads, shallots, and 1 tablespoon salt.

    Bring to a boil over high heat, reduce to a simmer, and cook for 10 minutes.

    Add the potatoes and cook until tender but not mushy, about 10 minutes. Add the corn and kielbasa and cook for 3-4 minutes.

    Add the crab legs and cook for 3 minutes. Add the lobster tails, mussels, and clams.

    Return to a boil, cover, and cook for 5 minutes. Add the shrimp, cover again, and cook for another 3-4 minutes, until the seafood is done.

    Remove from the heat and stir to coat everything in broth. Reserve 1 cup broth, then drain through a large colander and return the seafood mixture to the pot.

    For the sauce, melt the butter in a large saucepan over medium-low heat. Add the minced garlic and cook until fragrant, about 1 minute.

    Add 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/4 teaspoon red pepper flakes, and the granulated sugar; cook 1 minute. Add the reserved broth and simmer 3-5 minutes, until slightly thickened.

    Pour the garlic-butter sauce over the seafood and toss well. Transfer to a large serving platter and serve with lemon wedges.

Ago's Notes

  • Discard mussels or clams that remain closed after cooking.
  • Add the seafood in stages so the shellfish cook through without making the shrimp tough.

Serve immediately with lemon wedges and plenty of napkins.
