Baked Artichokes (simple, tender, light)

Baked artichokes are a versatile side dish with few ingredients. Discover my recipe and video to make them tender and flavorful for many uses.

Baked Artichokes (simple, tender, light)

Ingredients

  • 4 carciofi
  • 3 tbsp oil
  • 1 Lemon
  • 6 Sage
  • 1 rametto di mentuccia
  • 2 rametti di mirto
  • 1 tbsp Pink Peppercorns
  • Salt

Instructions

    First, clean the artichokes, carefully removing the tougher outer leaves, trimming the stem, leaving only 5 cm, and extracting only the most tender hearts. Wear gloves to avoid staining your hands, and as you clean them, place them in a bowl with the whole lemon cut into pieces. Then, divide each artichoke into 4 parts and remove the fuzz from the center of each. Once all the artichokes are cleaned, always leave them in the water and lemon. Meanwhile, prepare the seasoning by placing the oil in a bowl. First, finely chop the sage, mint, and most of the myrtle with a long, sharp knife, mix well, and season with salt. Add to the oil along with most of the pink peppercorns, crushing them well. Mix everything together and assess whether you need another tablespoon of oil. Then, with a pastry brush, season each part of the artichoke, both front and back:

    Finally, arrange the artichokes in a baking dish, spacing them out so they are not touching, but each occupies its own space. Complete the seasoning with the remaining marinade, pink peppercorns, and myrtle leaves. If there is no marinade left, brush with a little more oil.

    Finally, add 2 tablespoons of water to the sides of the baking dish, cover the dish with aluminum foil. At this point, bake your artichokes in a preheated oven at 180°C (356°F) static (160°C/320°F convection) for - 30 minutes in the middle rack. After 20 minutes, remove the foil and let bake for the last 10 minutes without foil. Assess whether to add another brush of oil before the last 10 minutes. They are ready when a fork inserted into them is tender. In this case, I arranged them on a serving platter and served them hot with my homemade Mayonnaise. Here are your Baked Artichokes.
