Golden chicken thighs in a quick creamy pan sauce with garlic, sliced mushrooms, chicken broth, and Parmesan.

Creamy Garlic Mushroom Chicken

Ingredients

  • 4 chicken thighs
  • 1/2 tsp Salt
  • 1/4 tsp black pepper
  • 1 tbsp cooking oil
  • 2 tsp garlic
  • 8 oz mushrooms
  • 1/2 cup Chicken Broth
  • 1 cup Half and Half, room temperature
  • 1/4 cup Parmesan Cheese
  • Fresh Parsley

Instructions

    Season both sides of the chicken thighs with the salt and black pepper.

    Heat a large skillet over medium heat and add the cooking oil. Add the chicken and cook until golden and cooked through, about 5 minutes per side. Transfer to a plate and cover to keep warm.

    Add the minced garlic to the skillet and sauté for 1 minute, until softened. Add the mushrooms and sauté for 5-7 minutes, until wilted.

    Pour in the chicken broth and scrape the browned bits from the bottom of the skillet.

    Add the room-temperature half-and-half and bring to a gentle simmer. Reduce the heat to medium-low and simmer, stirring often, for 5 minutes. Stir in the Parmesan over low heat until melted and smooth.

    Taste and adjust seasoning. Return the chicken to the skillet, spoon sauce over it, and warm over low heat until the center reaches 165°F (74°C). Garnish with parsley if desired and serve.

Ago's Notes

  • Boneless skinless chicken thighs stay juicy; thin chicken-breast fillets also work, cooked about 4 minutes per side to 165°F.
  • Bring the half-and-half to room temperature, keep it at a gentle simmer, and add Parmesan over low heat for a smooth sauce.

Spoon plenty of mushroom sauce over each chicken thigh and serve hot.
