To prepare the creamy tomato pasta, first bring a pot of salted water to a boil and cook the pasta until al dente. In the meantime, prepare the sauce: halve the cherry tomatoes and thinly slice the green onion.

Add the green onion to a large skillet with a drizzle of olive oil and sauté gently for about ten minutes. When it has softened, grate the lemon zest and add the cherry tomatoes.

Season with salt and add a ladle of the pasta cooking water. Cook over medium heat for about 15 minutes, then remove from heat and stir in the basil leaves.

Transfer the sauce to a blender and blend with an immersion blender to create a smooth sauce. If desired, you can pass the sauce through a sieve for an even smoother and more velvety texture.

Pour the sauce back into the skillet, then season with a pinch of smoked tomato peel and more grated lemon zest. Turn the heat to low and let it reduce slightly.

At this point, the pasta will be cooked, so drain it directly into the skillet with the sauce and gently mix. Finally, add a few more basil leaves.

Off the heat, stir in a drizzle of olive oil and a small piece of butter and mix everything well, adding a little pasta cooking water if needed. Serve your creamy tomato pasta garnished with more basil to taste!
