Easter Bunny Cake
The Easter bunny cake is a visually stunning and irresistible dessert, perfect for bringing something different to the table during the holidays. It's a soft and delicious chocolate cake base, similar to a flourless chocolate cake, topped with whipped cream and lots of colorful decorations that make it cheerful and very appealing, especially for children. It's not a traditional recipe, I know, but sometimes it's nice to break the mold and have fun with a creative dessert that captivates at first glance. Plus, it's easier than it looks: just a little skill in cutting and the WOW effect is guaranteed. Perfect as an Easter dessert or for a spring buffet, you'll see that it will disappear in no time!

First, prepare the cake pans, which must be of the same diameter (24 cm), and you must grease and flour them, or line them with parchment paper.

Separate the egg yolks and whites and whip the whites until stiff peaks form.

Melt the butter and chocolate in a double boiler or in the microwave.

Let the melted chocolate cool slightly, then add the egg yolks, then the sugar, and finally the whipped egg whites, mixing gently to avoid deflating them.

Divide the mixture into the 2 pans, trying to divide it fairly evenly in half, and bake for about 25 minutes in a preheated oven at 180°C (350°F), then let cool completely.

When the 2 bases are completely cool, whip the heavy cream that has been chilled in the refrigerator.

Leave one of the 2 bases intact and place it upside down on a serving plate: it will be the head of the bunny. Cut the second base as shown in the picture to obtain the 2 ears and the bow tie, also turn these upside down and place them next to the head.

With a pastry bag or a spatula (or both, as I did), cover the entire surface of the cake with whipped cream, then proceed to decorate as desired with chocolate eggs, sprinkles, and Mikado bars to create the bunny's face.

The Easter bunny cake is ready; all you have to do is serve it.
