Fried peppers, also known as 'friggitelli,' are a simple and quick side dish, perfect to accompany meat or fish.

Fried peppers are a perfect example of how simplicity and respect for ingredients can create a deeply satisfying side dish. Their subtle sweetness and the touch of garlic make each bite a refined balance, ideal for accompanying meat or fish without ever overpowering it. The pan, with its direct heat, preserves the crispy texture of the ingredients, making this dish a practical and authentic choice for anyone looking for flavor without complications.

Fried Peppers

Ingredients

  • 1.3 lb Fried peppers
  • 2 garlic
  • 0.8 oz oil
  • 0.8 oz Water
  • to taste Salt

Instructions

  1. 1

To prepare the fried peppers, first wash the peppers thoroughly under running water, leaving them whole with the stem intact, and dry them with a paper towel. In a rather large pan, heat the extra virgin olive oil and sauté the garlic cloves for 3-4 minutes over medium heat, then add the peppers.

  2. 2

Quickly sauté the peppers over high heat, turning them frequently, then lower the heat, add the water, and cover with a lid. Cook the peppers for about 10 minutes until they are wilted.

  3. 3

When the peppers are wilted, remove the garlic from the pan, season with salt, and turn off the heat: your fried peppers are ready to be served!

Ago's Notes

  • Adjust the salt according to the salt content of the preserved ingredients.

Enjoy your meal, fellow cook - these fried peppers, with their balance of sweet and spicy flavors, are a tribute to simplicity that works wonders when you respect the ingredients and let the fire embrace them with gentleness.
