Gratinated Artichokes

To prepare the gratinated artichokes, start by cleaning the artichokes: with a small knife, remove the outer filaments. Trim the base of the stem, then wash them under running water and soak them in water and lemon juice to prevent them from turning dark.

Boil the artichokes in boiling water for 25 minutes. Meanwhile, prepare the béchamel sauce: melt the butter in a saucepan, then add the flour.

Cook for 2 minutes, stirring with a whisk. Once you have a golden mixture without lumps, add the hot milk little by little and let the sauce thicken, stirring constantly with the whisk.

Season with salt, pepper and nutmeg. Set aside and drain the artichokes, which will be ready in the meantime.

Grease a 20x30 cm baking dish and sprinkle the bottom with breadcrumbs. Place a layer of artichokes on top.

Cover with half of the lukewarm béchamel sauce and sprinkle the surface with half of the grated Parmesan cheese. Now, continue with a second layer of boiled artichokes.

Complete with the remaining béchamel sauce, grated cheese and a few knobs of butter. Bake in a preheated oven at 200°C for 35 minutes, then continue for another 5 minutes in the grill mode. Remove the gratinated artichokes from the oven and let them cool slightly before serving!
