Greek Feta and Melty Gouda Cheesesteak

Preheat the oven to 400°F.

Melt the butter with the onion in a large skillet over medium heat. Cook for to 5 minutes, until softened.

Add the shaved lamb or skirt steak. Season with paprika, cayenne, salt, and black pepper. Cook for to 8 minutes, until browned. Stir in the parsley, oregano, and dill, then remove from the heat.

Split the rolls or pitas and fill them with the meat. Top each with feta and a slice of cheese. Place on a baking sheet and bake for about 5 minutes, until the cheese is melted and bubbly.

Stir the remaining feta into the tzatziki. Toss the cucumbers and tomatoes with a pinch of oregano and dill.

Add lettuce to each sandwich. Spoon the feta tzatziki over, then top with the cucumber and tomato mixture. Finish with a squeeze of fresh lemon. I love serving these with oregano fries!
