Greek Feta and Melty Gouda Cheesesteak

Ingredients

  • 1 tbsp butter
  • 1 yellow onion
  • 1 lb shaved lamb shoulder
  • 1 tsp smoked paprika
  • 1/4 tsp Cayenne pepper
  • Salt
  • black pepper
  • 1/4 cup Parsley
  • 1 tbsp Oregano
  • 1 tbsp Dill
  • 4 sandwich rolls or fresh pita split
  • 1/2 cup Feta Cheese
  • 4 slices gouda cheese slices
  • 1 cup tzatziki sauce
  • 2 Cucumbers
  • 1 cup Cherry or Grape Tomatoes
  • 1 Lemon

Instructions

  1. 1

    Preheat the oven to 400°F.

  2. 2

Melt the butter with the onion in a large skillet over medium heat. Cook for to 5 minutes, until softened.

  3. 3

Add the shaved lamb or skirt steak. Season with paprika, cayenne, salt, and black pepper. Cook for to 8 minutes, until browned. Stir in the parsley, oregano, and dill, then remove from the heat.

  4. 4

Split the rolls or pitas and fill them with the meat. Top each with feta and a slice of cheese. Place on a baking sheet and bake for about 5 minutes, until the cheese is melted and bubbly.

  5. 5

Stir the remaining feta into the tzatziki. Toss the cucumbers and tomatoes with a pinch of oregano and dill.

  6. 6

Add lettuce to each sandwich. Spoon the feta tzatziki over, then top with the cucumber and tomato mixture. Finish with a squeeze of fresh lemon. I love serving these with oregano fries!

Ago's Notes

  • Adjust salt to taste based on your canned goods.

Let the smoky warmth of the spices and the bright freshness of parsley carry the rich, melt-in-your-mouth layers of cheese and tender meat-trust the process, and let your plate tell a story of bold flavors and simple respect.

Birria Tacos

Birria tacos are a celebration of slow-cooked, richly spiced beef tucked inside crisp, cheesy tortillas. This recipe embraces the Italian culinary principle that simplicity perfected is superior to complexity invented. Using a humble beef chuck roast, the meat is transformed through patient slow cooking into tender, flavorful shreds that carry the essence of smoky chipotle and warm spices. The tortillas, dipped briefly in the aromatic consomé, crisp beautifully with melted Monterey Jack cheese, creating a harmonious balance of textures and flavors. This dish honors tradition by respecting the ingredient's integrity and the slow-cooking technique that unlocks deep flavor. It's a straightforward recipe that anyone can master, proving that with quality ingredients and proper technique, you don't need to overcomplicate to achieve excellence.
