Light vegan whole-wheat waffles made without added sugar, eggs, butter or dairy, naturally sweetened with thick fruit puree.

Whole-wheat flour and thick fruit puree create lightly sweet, fluffy waffles without eggs, butter or dairy. The simple batter rests briefly before cooking to a golden finish in the waffle iron.

Healthy Waffles

Ingredients

  • 200 g whole wheat flour, or regular flour
  • 2 tsp Baking Powder, preferably cream of tartar baking powder
  • 250 ml oat milk
  • 80 g fruit puree, preferably unsweetened apple-banana
  • 2 tbsp Sunflower Oil, or coconut oil

Instructions

    Mix the flour and baking powder in a bowl. In a second bowl, whisk the oat milk with the thick fruit puree and oil. Add the dry mixture to the wet ingredients and stir until smooth. Add vanilla, cinnamon or sweetener only if desired, then let the batter rest for about 5 minutes.

    Preheat and grease the waffle iron well. Spoon one-quarter to one-sixth of the batter into the center for each waffle, close the iron and cook until golden and set. Serve warm or cold.

Ago's Notes

  • Light whole-wheat flour gives the softest result, though regular flour may be substituted.
  • Use thick unsweetened apple-banana puree or mashed ripe banana. Add vanilla or cinnamon, and sweeten only if desired.
  • Store cooled waffles in an airtight container. For longer storage, freeze them and briefly toast them before serving; do not refrigerate the baking-powder batter overnight.

Serve the waffles warm or cold once their surfaces are golden and their centers are cooked through.
