One Pot Tortellini

Ingredients

  • 1 Half an onion
  • 2 knoblauchzehen
  • 2.7 oz Sun-Dried Tomatoes
  • 3.3 oz babyspinat
  • 1 tbsp Canola Oil
  • 3 tbsp Tomato Paste
  • 1 cup Vegetable Broth
  • 1 lb tortellini
  • 6.7 oz Liquid Fresh Cream
  • 1.7 oz Parmesan Cheese
  • Salt
  • pepper

Instructions

  1. 1

    Finely chop the onion and garlic. Slice the sun-dried tomatoes into strips. Wash the baby spinach.

    Heat the canola oil in a pan and sauté the onion and garlic. Stir in the tomato paste and sauté briefly.

    Add the vegetable broth and tortellini, bring to a boil, and simmer for 2 minutes with the lid on and medium heat.

    Then, add the cream and spinach and let the spinach wilt briefly.

    Stir in the Parmesan cheese and tomatoes, and season the tortellini pan with salt and pepper.
