Instant Pot Pork Loin

Ingredients

  • 2.5 lb boneless pork loin roast
  • 3 tbsp brown sugar
  • 2 tsp Onion Powder
  • 2 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Dried Thyme
  • 1 tsp Kosher Salt
  • 1/2 tsp black pepper
  • 2 tbsp Olive Oil
  • 1 1/4 cup Chicken Broth
  • 2 tbsp Worcestershire Sauce
  • 2 tbsp Cornstarch
  • 1 tbsp Water

Equipment

  • Instant Pot

Instructions

  1. 1

Combine the brown sugar, onion powder, garlic powder, paprika, thyme, salt, and black pepper.

  2. 2

Generously coat the pork loin with the seasoning mixture.

  3. 3

Turn the instant pot to saute mode and add the oil.

  4. 4

Add the pork loin and cook for 2-3 minutes on each side until golden brown.

  5. 5

Remove the pork and set it aside.

  6. 6

Add the chicken broth and deglaze the bottom of the pot.

  7. 7

    Turn off the instant pot.

  8. 8

Add the Worcestershire sauce to the chicken broth, then place the trivet in the instant pot. Add the pork loin on top of the trivet.

  9. 9

Place the lid on the instant pot and set the valve to the sealing position. Cook on manual high pressure for 18 minutes. Once the cooking time has elapsed, naturally release the pressure for 20 minutes then release any remaining pressure. Once you open the lid, check that the internal temperature is at least 145 F.

  10. 10

Remove the meat from the pot and set it aside to rest for 15 minutes.

  11. 11

Turn the instant pot to saute mode. Make a slurry of the cornstarch and water. Once the cooking liquid has come to a simmer, whisk the slurry into the cooking sauce. Cook while stirring until thickened, about 3 minutes.

  12. 12

Slice the pork loin and top with the sauce.

Ago's Notes

  • Adjust salt to taste based on your canned goods.

Let the flavors of brown sugar and thyme dance with the richness of the pork. This recipe showcases the convenience of cooking in an Instant Pot while delivering the taste of slow-cooked comfort-you won't believe how tender it is! The technique might differ from traditional oven-roasted pork, but it's equally satisfying, if not more so, due to the added depth of flavor and ease of preparation. Enjoy this dish with family or friends, sharing the comforting warmth of a well-seasoned roast.
