Lentil Burgers
These lentil burgers are a great alternative to my old lentil burger recipe. As you can see, the ingredients are essentially the same, but there's one small but significant difference: instead of using regular lentils, I used red lentils. So, what does that mean? It completely changes the method! As you'll see when you read the instructions, the main characteristic of these burgers, and what makes them so unique, is that they're made with raw lentils. That's right! By using red lentils, with a very short cooking time, soaking them for 2 hours plus cooking the burgers in a pan is enough to cook them perfectly! The recipe is vegan and very tasty, but above all, it's unique: you can tease your friends by telling them you served them raw lentils ;)
Just one small tip: as is, the dough will be slightly delicate, so be careful when moving the burgers in the pan. If you prefer, you can add a cooked potato or a little flour to the mixture before blending everything, so you can be sure they won't break apart during cooking. Alternatively, you can bake your burgers at 200°C in a preheated oven for about 20 minutes, turning them halfway through.

Instructions
- 1
First, rinse the lentils well, then drain them, place them in a bowl, cover them with plenty of cold water, and let them rest at room temperature for 2 hours.
- 2
Meanwhile, prepare the other ingredients: peel and wash the carrots, parsley, and onion, and cut them into pieces.
- 3
Drain the lentils, place them in a mixer along with the parsley, onion, carrot, garlic (if desired), and salt. Blend briefly, so as not to obtain a too smooth mixture.
- 4
Heat a non-stick pan with a drizzle of oil and form the burgers directly in the pan, using an 8-10 cm cookie cutter. Cook your burgers over medium heat for 5-7 minutes per side, turning them very gently to brown the second side.
- 5
You can serve your burgers on a plate or, as I did, use them to fill a sandwich.
- 6
The lentil burgers are ready, all you have to do is serve them.
Ago's Notes
- Adjust the salt according to the salt content of the preserves.
What could be more comforting than a dish that tastes like home? These lentil burgers, with their balance of legumes and vegetables, are a tribute to the simplicity that makes Italian cuisine unique. Enjoy your meal, and may your table always be full of harmony.
