Meat and Bacon Rolls

To prepare the meat and bacon rolls, start by preparing the peppers: wash the peppers, cut them in half, and remove the stem and seeds. Divide the pepper into 8 slices of about 3 cm. Heat a grill over the fire, when it is hot, place the peppers on the grill to roast.

Let them cook for about 10 minutes, until they are well browned but still soft. Transfer the peppers to a baking dish, cover with plastic wrap, and let cool to room temperature.

Take a slice of beef and spread it on the cutting board. Fill by placing a slice of edam cheese divided in half in the center of the slice of meat. Place a slice of cooked pepper on the cheese, add a few sprigs of fresh thyme, salt, and pepper.

By gently pressing with your fingers, roll the slice of meat into itself, forming the roll. Wrap a slice of bacon around the roll and close it with one or two toothpicks.

Continue like this until all the rolls are finished. Pour a little oil into the pan and add two sprigs of thyme. Transfer the rolls to the pan.

Brown the rolls in a pan over medium heat for about 5 minutes, turning them to brown them well. Deglaze with white wine and let the alcohol evaporate. When the alcohol has evaporated, add the water.

Cover with a lid, continue cooking for about 5 minutes, then uncover, increase the heat and let the excess liquid reduce. The rolls should be soft and well browned. Turn off the heat and serve your meat and bacon rolls hot!
