Pistachio Date Chocolate Balls

Ingredients

  • 1 1/2 cup pitted dates
  • 1 cup Pistachios
  • 6 oz dark or semi sweet chocolate
  • 1 tsp Coconut Oil
  • 2 tbsp Pistachios

Instructions

  1. 1

Add 1½ cups pitted dates and 1 cup pistachios to a food processor. Pulse until the mixture breaks down and starts to stick together. It should hold when pressed between your fingers.

  2. 2

Scoop out about 1 tablespoon of the mixture at a time and roll it into balls. Place them on a parchment-lined plate or baking sheet.

  3. 3

Refrigerate the balls for 20 minutes to firm them up.

  4. 4

Melt 6 ounces chocolate in a heatproof bowl set over simmering water or in the microwave in 20-second bursts, stirring between each. Stir in 1 teaspoon oil if using.

  5. 5

Dip each chilled ball into the melted chocolate, letting any excess drip off, then place back on the parchment.

  6. 6

Sprinkle the tops with chopped pistachios while the chocolate is still wet.

  7. 7

Refrigerate for another 15 minutes, or until the chocolate is set.

Ago's Notes

  • Adjust salt to taste based on your canned goods.

These little treasures are a harmonious dance of sweet, nutty, and chocolatey flavors—each bite reveals the care that went into balancing each element, and the joy of sharing something made with respect for the ingredients. Enjoy!
